The Carlton Tel Aviv Hotel will host six Israeli chefs and six local wineries for a series of culinary events running from November 3 to December 10, bringing together different cooking styles and wine pairings in an intimate dining setting overlooking the Mediterranean.
The series, called Pop Up by Carlton TLV, will feature a different chef each week, with menus created specifically for the occasion. The dinners will explore a range of culinary influences, including Mediterranean cuisine, vegetable-focused cooking, open-fire techniques, Silk Road flavors, Galilean traditions and meat preparation.
Each evening will include a welcome cocktail, a chef-prepared dinner paired with wines from a participating Israeli winery, and an alcoholic dessert drink. The events will be kosher under the supervision of the Tel Aviv Rabbinate and are intended to accommodate up to 50 diners per evening.
The hotel will also offer a couples’ accommodation package combining a dinner from the series with an overnight stay at the five-star property and breakfast overlooking the sea. The package starts at NIS 2,850 per couple.
Six chefs, six culinary approaches
The series will open from November 3-5 with chef Tomer Agai, whose menu will draw on Mediterranean cuisine, seasonal ingredients, herbs and contemporary cooking techniques. The dinner will be paired with wines from Matar Winery.
From November 10-12, chef Oshri Mashid will present “Vegetables and More,” placing locally sourced vegetables at the center of the menu and exploring their flavors and textures alongside wines from Tulip Winery.
Chef Ohad Levy, from the Lili restaurant in Eilat, will take over from November 17-19. His menu will focus on open-fire cooking, smoky flavors and seasonal ingredients, combining traditional techniques with a contemporary Mediterranean approach. Agur Winery will provide the wine pairings.
From November 24-26, chef Assaf Stern will present a menu inspired by the Silk Road, bringing together culinary influences, spices and cooking techniques from different cultures. The dinner will be paired with wines from Jerusalem Winery.
Chef Hamudi Akla will lead the installment scheduled for December 1-3, with a menu drawing on the ingredients, flavors and culinary traditions of the Galilee. The dinner will explore the relationship between local food heritage and contemporary cooking, accompanied by wines from Lahat Winery.
The series will conclude from December 8-10 with chef Eran Nachshon and a dinner dedicated to meat. The menu will focus on cuts, preparation techniques and the handling of ingredients to highlight the distinctive flavors and textures of different cuts. Gvaot Winery will provide the accompanying wines.

Carlton Tel Aviv Hotel CEO Adi Nevo said the series was designed to bring together chefs, local wineries and diners interested in Israeli cuisine.
“We believe that a luxury hotel should offer much more than an accommodation experience, and should be a place that creates encounters, experiences and memories,” Nevo said. “The Pop Up by Carlton TLV series was born out of a desire to connect Israel’s talented chefs, local wineries and an audience that loves and appreciates quality cuisine.”
“We chose to create an intimate, rotating series in which each evening tells a different story, with an emphasis on creativity, the quality of ingredients and a carefully considered hospitality experience,” he added.
