In recent years, luxury hotels across Tel Aviv have increasingly sought to draw in local residents rather than relying solely on overnight guests, leveraging high-end gastronomy as a primary draw. To that end, the Carlton Tel Aviv is launching "Pop Up by Carlton TLV," an exclusive culinary series running from November 3 through December 10. Over the course of six weeks, a rotating lineup of prominent chefs will take over the hotel kitchen, with each evening highlighting pairings from a distinct Israeli winery.
The dinners are scheduled for three nights a week - Tuesday through Thursday - starting at 8:00 PM. Priced at NIS 650 per person, the ticket includes a welcome cocktail, the chef's multi-course dinner, wine pairings, and a closing digestif. To maintain an intimate dining atmosphere, capacity is strictly capped at approximately 50 guests per evening. All menus are certified kosher under the supervision of the Tel Aviv Rabbinate.
The series kicks off with Chef Tomer Agay from November 3 to 5, showcasing a Mediterranean-inspired menu paired with selections from the Matar Winery. The following week, running November 10 to 12, Chef Oshry Mashid takes over with a vegetable-forward menu alongside Tulip Winery. From November 17 to 19, Chef Ohad Levi of Eilat's Lilie restaurant brings an open-fire culinary experience, complemented by Agur Winery.
Continuing the journey, Chef Asaf Shtern presents a Silk Road-themed menu paired with Jerusalem Winery from November 24 to 26. From December 1 to 3, Chef Hmodi Okala introduces the vibrant flavors of the Galilee alongside Lahat Winery. The series culminates with Chef Eran Nachshon from December 8 to 10, featuring a specialized meat-centric menu paired with Gvaot Winery.
For patrons looking to extend the experience into an urban staycation, the hotel is offering an exclusive overnight package. The deal covers two tickets to the dinner series, a night's accommodation, and breakfast the following morning, with rates starting at NIS 2,850 per couple.
"We believe that a luxury hotel should offer much more than just an overnight stay," said Adi Nevo, CEO of the hotel. "We are thrilled to open our doors to the Tel Aviv crowd and culinary enthusiasts from all over the country."
